Last week we had an open house at work were they asked volunteers to bring in baked goods. I brought in 3 types of cookies, all from Baking by Dorie Greenspan. One of these types of cookies were the Linzer Sables. In her recipe Dorie gives 3 options for types of ground nuts and several options for a filling. I opted to go with ground walnuts and raspberry jam. They were full of nutty jammy goodness. One of my co-workers said to me “Oh, you brought fancy cookies!” The make a pretty addition to any holiday cookie platter.
Next time I want to try making them with a Nutella filling. Or perhaps make them with ground almonds and use an apricot jam as a filling. So many options, so little time. Sigh.
